Chocolate   For this Lab, my house did not have much chocolate to work with so I just used the rest of an open pack of Hershey's Dark Chocolate chips. I poured it into a bowl and filled it a little with very warm water and begin to stir slowly. After stirring it, I separated the solids from the liquid into two separate bowls. For the solids, the water makes it softer and crumble when putting it int he mouth rather than letting it melt which I found pretty strange. I could be becasue of how it past a certain phase when it initially came into contact with warm water. As far as the liquid, it was VERY liquidy and had a heavy chocolate taste as expected. Just tasted bland and like watered-down cocoa. The main effects of whisking dark chocolate into warm water are the dissolution of cocoa solids and the emulsification of cocoa butter. However, after the liquid and solids are sep arated by filtration, some solid chocolate chips are left behind because of the ins oluble properties o...

M5 Lab 8 - Dairy Products   Queso Dip Ingredients:  Cheddar Jack Cheese Low-moisture part-skim Mozzarella cheese Queso Fresco Casero Crumbling cheese Half & Half Tortilla Chips My Steps: Add the grated cheeses and eye ball the half and half in a bowl until it covers the bottom layer of cheesesover low heat boiling water Stir as the cheese melted and also let it sit to the desired texture. Poured into another glass bowl and served as a side dip with tortilla chips Taste Test: The dip itself was very cheesy and salty. The texture was also grainy when putting it in my mouth. When dipping the tortilla chips into it, the chips kind of disguises the real taste of the dip so in order to get all the goodness, you really have to dip a lot of the chip into it. It was also very easy to identify the dairyness because it was very milky and cheesy. I let my family try it and a lot of seemed to really like it. They kept digging into the chips and the dip. My "Tutu," (grandmother),...

M4 Lab 7  T's Special Oatmeal Ingredients: Chocolate Milk Oats Peanut butter Frozen blueberries Steps: Boil 1 cup of chocolate milk Throw in half cup of oats once milk comes to top boil Continue to lower heat and stir oats till the liquid soaks into the oats Once the oats come to a preferred texture, put in bowl I mixed in a spoon full of organic peanut butter and then just topped it with frozen blueberries  Taste test: For some reason it tasted very cookie-like with its own richness. It was mushy which is how I like to have my oatmeal. I liked how it looked like coco pebbles soaked and thickened in milk. I was able to taste the burnt parts where the oats were a little burnt and overcooked as well as the burn dairy part of it. But it wasn't anything too noticeable. When oats are boiled into chocolate milk the starch in oats absorbs water from the chocolate milk and undergoes gelatinization when heated. This process thickens the mixture, resulting in a creamier texture. The fib...
