M4 Lab 7 

T's Special Oatmeal

Ingredients:

  • Chocolate Milk

  • Oats

  • Peanut butter

  • Frozen blueberries




Steps:
  1. Boil 1 cup of chocolate milk

  2. Throw in half cup of oats once milk comes to top boil

  3. Continue to lower heat and stir oats till the liquid soaks into the oats

  4. Once the oats come to a preferred texture, put in bowl

  5. I mixed in a spoon full of organic peanut butter and then just topped it with frozen blueberries 


Taste test:

For some reason it tasted very cookie-like with its own richness. It was mushy which is how I like to have my oatmeal. I liked how it looked like coco pebbles soaked and thickened in milk. I was able to taste the burnt parts where the oats were a little burnt and overcooked as well as the burn dairy part of it. But it wasn't anything too noticeable.


When oats are boiled into chocolate milk the starch in oats absorbs water from the chocolate milk and undergoes gelatinization when heated. This process thickens the mixture, resulting in a creamier texture. The fiber in oats also absorbed liquid, contributing to the overall thickness and of the mixture. However, unlike starch, fiber does not dissolve in water, so it remains intact, adding a slightly chewy texture. The oats may impart a slightly lighter color to the chocolate milk due to the presence of their natural color, but the dominant color will still be the chocolate. The presence of swollen oats and gelatinized starch gave the mixture a smooth and creamy feel, with a slightly thicker appearance compared to plain chocolate milk. Overall, peanut butter and frozen blueberries complemented the creamy texture and chocolate flavor of the oats, while adding richness, sweetness, and other nutritional benefits.


In conclusion, I think this activity was a success. I got to try something new that I decided to kind of just do on my own. It ended up tasting pretty good that I know now can be "perfected." Next time when boiling any kind of milk or dairy, I probably won't wait till it gets to a top boil or just let it get to a boil on a lower heat so it can get rid of the burnt taste.
